Fancy some homemade muesli bars? Don't be put off by the name-they're not really made from birdseed, but they do have a delicious mix of seeds, nuts and fruit (which you could mix and match to suit your taste) coated with a sticky toffee mixture...
Heat the following ingredients in a frying pan, one at a time(as they cook at different rates):
1 cup sesame seeds
1 cup sunflower seeds
1 cup coconut
1 cup peanuts/walnuts, chopped
Combine these in a bowl and add 1 cup sultanas/ chopped dried apricots
Heat:
100g butter
1/4 cup honey
1/4 cup brown sugar
Simmer to soft ball stage (like making toffee) then pour over te seed mixture.
Mix well.
Press into a greased slice tin so it is about 2 cm thick.
Refrigerate, then slice into bars.
These look delicious! Will have to try them out -- I always love nutty, seedy things.

ReplyDeletesnap! i just made some muesli bars this afternoon. i use the 'munchkin bars' recipe from the Edmonds book and they are SUPER yummo but they do have a fair whack of sugar in them. I might try these ones as they seem to have much less sugar. thanks!!
