I adapted this recipe from a book I bought recently called My Favourite Recipes: Easy Eggs and Cheese
I will write what I did and in brackets what the recipe called for
A layer of tinned tomatoes (sliced fresh tomatoes)
A layer of pre-grated pizza cheese-parmesan, cheddar and mozerella (sliced mozerella)
A layer of sliced steamed silverbeet (handful of baby spinach leaves).
Salt and pepper (nutmeg and torn basil leaves too)
Make small wells in the mixture and crack an egg into them.
Bake for about 10-15 minutes at 200 degrees until the egg white is set and the yolk is still just runny...I over did mine a wee bit.
I ate them both myself and they were delicious.
