New Items listed in my Felt Shop

A while back I posted about my Pay-it-forward parcels that I sent out. What I had made was some 'handbag slippers'. You can see them being worn by some of the recipients here, here and here.
I got some great feedback on them so I decided to make a few more pairs and list them in my Felt shop.

Mid Week Meal: Steak Sandwiches

Halve a ciabatta bun. Lightly grill with cut sides down...
Spread tomato relish on bottom half of bun...
 Top with cheese (brie is even better)...
 And grill...
 Top with caramelised onions (see recipe below)...
 Add a layer of sliced steak, cooked medium rare...
Add sauteed mushrooms...
 Top with a layer of lettuce, and spread the top half of bun with homemade mayonnaise...
 Sit other half of ciabatta bun on top...
 Enjoy!
Caramelised Onions
Slice a couple of onions into rings. Saute in butter until soft. Add a spoonful of sugar (brown or dark cane) and a splash of balsamic vinegar. Lower heat and simmer for at least half an hour, adding a bit of water to avoid sticking. They should turn glossy and saucy.

Mayonnaise
In a blender put 1 egg, 2T white vinegar, 1/2tsp salt, 1/2tsp sugar, 1 tsp mustard (dijon or wholegrain). Blend, then with blender still going on a slow speed drizzle in up to 1 cup of oil. Stop when it gets to the consistency you desire.
You can add crushed garlic and substitute the vinegar for lemon juice .
Stores and lasts really well in a glass jar in the fridge.

Rice Bubble Slice

100g butter
1/2 c. raw sugar
2T honey
1/2 c. sesame seeds
1/2 c. chopped peanuts
1/2 c. coconut
3 c. rice bubbles
Combine butter, sugar, and honey. Stir over a low heat until sugar dissolves, then bring to the boil. Boil gently for 5 mins. Remove from the heat. Add all remaining ingredients. Mix well. Spread evenly in a greased slice tin. Bake in a moderate oven for 3 mins. Break into pieces or cut when cold.
You can boil mixture a bit longer then no need to bake in the oven.

My Creative Space

I have just completed these Mary-Jane style booties, which are a variation on the striped booties that I have been selling in my Felt shop for a while. These are now for sale here.

Mid Week Meal: Chicken Pie

I usually just make up a filling as I go for my chicken pies but one night last week I was tossing up between making a pie or another chicken dish that I love and usually serve over a potato hash. I decided to combine the two.
Mustard Cream Chicken
(to be served on a potato hash or as a pie filling)
1 T oil
2 tsp crushed garlic
3 chicken breasts
3/4 c. white wine
1 T chopped or dried basil
2 tsp dijon mustard
1/2 c. cream
3 shallots or a medium onion chopped
1 tsp cornflour
2 tsp water
Heat oil in a pan, add garlic, shallots/onions and chicken (whole for potato hash version or diced for pie version). Cook until browned all over.
Add wine, basil and mustard and simmer, covered, for 15 minutes. Stir in cream and cornflour blended with water (you may need a little more to thicken enough for a pie filling), Cook, stirring, until thickened.
Serve chicken sliced with potato hash or use to fill a pie.

Potato Hash
Mix together 2 large potatoes(peeled and grated), 1 egg, 1 T flour and chopped parsley.
Heat some oil in a fry pan, add mixture and flatten and shape into a round.
Cook until golden, turn over and cook the other side until golden.
