Mid Week Meal: Steak Sandwiches

Halve a ciabatta bun. Lightly grill with cut sides down...
Spread tomato relish on bottom half of bun...
 Top with cheese (brie is even better)...
 And grill...
 Top with caramelised onions (see recipe below)...
 Add a layer of sliced steak, cooked medium rare...
Add sauteed mushrooms...
 Top with a layer of lettuce, and spread the top half of bun with homemade mayonnaise...
 Sit other half of ciabatta bun on top...
 Enjoy!
Caramelised Onions
Slice a couple of onions into rings. Saute in butter until soft. Add a spoonful of sugar (brown or dark cane) and a splash of balsamic vinegar. Lower heat and simmer for at least half an hour, adding a bit of water to avoid sticking. They should turn glossy and saucy.

Mayonnaise
In a blender put 1 egg, 2T white vinegar, 1/2tsp salt, 1/2tsp sugar, 1 tsp mustard (dijon or wholegrain). Blend, then with blender still going on a slow speed drizzle in up to 1 cup of oil. Stop when it gets to the consistency you desire.
You can add crushed garlic and substitute the vinegar for lemon juice .
Stores and lasts really well in a glass jar in the fridge.
